West Lake beef soup

Production steps:
Step 1: prepare beef tenderloin, white jade mushroom, tender bean curd, egg, coriander and shallot.
Step 2: dice beef tenderloin, dice tofu, dice white mushroom, pour egg white into a small bowl, chop shallot and coriander.
Step 3: add water to soak beef powder, prepare wet starch.
Step 4: blanch the minced beef in boiling water until just cooked (skim the foam).
Step 5: fish out.
Step 6: bring water (or chicken soup) to a boil and add white mushrooms.
Step 7: add tender tofu.
Step 8: bring the beef to a boil.
Step 9: add salt.
Step 10: mix in the pepper.
Step 11: pour in the wet starch.
Step 12: beat in the egg white and turn off the heat. Serve in a bowl and sprinkle with coriander and scallion.
