Production steps:
Step 1: wash the inside and outside of the pork belly with running water, cut off the outer layer of grease, put it into a basin, wash it with salt and white vinegar, marinate for about 5 minutes. (the pork tripe I sell here has been cleaned and cut, so I can come back to clean it.)
Step 2: then put in 2 tbsp flour and continue to knead, marinate for 5 minutes, knead pork tripe repeatedly with both hands, then rinse with water.
Step 3: washed pork tripe is very clean, no impurities, no odor.
Step 4: slice ginger and tie onion.
Step 5: put the washed pork tripe, ginger slices and scallion knot into the pot, add clear water to cover the pork tripe.
Step 6: bring to a boil, turn to low heat and cook for about 1 hour. Chopsticks can easily pierce the pork belly.
Step 7: pick up the cooked pork tripe and soak it in ice water to cool.
Step 8: take a sealed container, pour in the bittern, put in the pork belly, and marinate in the refrigerator for at least 3 hours. (if it's a whole pork tripe, cut it in half and marinate it so that it tastes good inside and outside.)
Step 9: when eating, cut into small pieces.
