Introduction:

Production steps:

Step 1: raw materials are ready.

Step 2: wash the spareribs and cut them into small pieces. Pour cold water into the skillet. Add the spareribs and bring them to a boil. Skim off the foam and take them out. Wash them with cold water and drain the water.

Step 3: heat the oil in the frying pan, turn the heat down and fry the ribs until golden on both sides.

Step 4: put the Monascus rice into the screen, wash with flowing water to remove the floating soil, and put clove and fennel into the bag. Cut scallion into ginger slices.

Step 5: leave oil in the pan and saute shallot and ginger.

Step 6: stir fry spareribs, rice wine and soy sauce evenly, add enough hot water and bring to a boil.

Step 7: put the bag and anise cinnamon into the pot. Add rock sugar and Monascus rice, bring to a boil, turn to low heat and simmer for 1.5 hours.

Step 8: add salt and vinegar and simmer for 20 minutes until the soup is thick.

Note: 1 red koji rice not only adds color to the ribs, but also makes the soup rich. Wuxi food is sweet. I adjusted the amount of sugar and salt to make it more suitable for my family (northerners). You can adjust it according to your own taste. 3. Add appropriate amount of vinegar to reduce the greasy feeling and adjust the sweetness.
