Production steps:
Step 1: remove the shell and wash the soybeans, blanch them in boiling water, rinse with clean water and drain.
Step 2: 2 Hunan chopped peppers and eggs.
Step 3: break the egg into a bowl and beat it into egg liquid. Cut ginger into shreds.
Step 4: heat the pan and pour in a little oil.
Step 5: turn off the heat when it is semi solidified, stir fry with the remaining temperature until there is no liquid, and set aside.
Step 6: heat a little oil in the pan, add shredded ginger and saute until fragrant.
Step 7: add the soybeans and stir fry for a while.
Step 8: add 1 tbsp Hunan chopped pepper and stir well.
Step 9: add a little salt in turn.
Step 10: add a little sugar to taste.
Step 11: add the eggs and stir well.
Step 12: Sprinkle with scallions.

Note: 1. This chili sauce is the brand of Xiaoxu melon that I introduced before. It's very spicy and fragrant. Of course, if you can't eat spicy, you can add non spicy chopped pepper. 2. When the eggs are mixed into egg liquid, add a little water to stir together, so that the eggs are more tender, smooth and soft. 3. Whether the beans are boiled or not completely depends on their tenderness; if they are very tender, you don't need to boil them.
