Production steps:

Step 1: wash the eggplant and cut it into small pieces.

Step 2: prepare a bag of leaf bone ginseng, untie the rope and take some bone ginseng.

Step 3: peel and chop ginger and garlic, cut shallot into small pieces and set aside.

Step 4: heat up the frying pan, add the eggplant pieces, dry fry and soften, and then remove.

Step 5: heat the oil in the frying pan, add ginger and garlic, and stir fry until fragrant.

Step 6: add some bone ginseng and stir fry.

Step 7: add eggplant and stir fry for a while.

Step 8: taste, add a spoonful of soy sauce and a small amount of salt, stir well.

Step 9: stir fry shallots evenly, then turn off the heat and put them on the plate.
