Introduction:

Production steps:

Step 1: 20 grams of high powder pumpkin paste, 75 grams of milk, stir well, heat over low heat, slowly stir into paste soup, cool, refrigerate for one hour.

Step 2: add soup seed, 300g high flour, 3G baking powder, 120g milk, 50g whole egg liquid, 40g white granulated sugar, European bread, and stir for 10 minutes

Step 3: add salt, butter and European bread until rough film is formed. Knead for 10 minutes

Step 4: remove the dough from the bread maker and beat it on the workbench for 5 minutes until it is expanded

Step 5: divide the dough into two parts, add 3 grams of bamboo charcoal powder to one of them, knead well, put it in a container, cover it, and ferment at 30 ℃ for 45 minutes

Step 6: double the size

Step 7: take out the dough and beat it to the worktable several times to empty the air. Then divided into 8 groups, reunion, wake up for 10 minutes

Step 8: take a black and a white dough

Step 9: knead into a ball

Step 10: roll it into tongue shape, roll it up and put it into the toast box for final fermentation

Step 11: hair to eight full, brush egg liquid

Step 12: put into the preheated oven, upper temperature 180 ℃, lower temperature 185 ℃, bake for 30 minutes. During baking, if the toast is colored, cover it with tin foil.

Step 13: demould immediately after coming out of the oven, put it on the grill and air it to the temperature of palm, then pack it in bags and tie it tightly.

Materials required:

High gluten flour: 320G

Pumpkin puree: 15g (optional)

Salt free butter: 25g

Milk: 195g

Bamboo charcoal powder: 3 G

Yeast powder: 3 G

Whole egg liquid: 60g

White granulated sugar: 40g

Salt: 1g

Note: the pumpkin puree in the recipe is leftover when I make steamed bread. I want to add it instead of wasting it. When you make this toast, you don't need to add pumpkin puree, just add 10 grams more milk. Because it's the first time to make marble toast, I have no experience. I put too much bamboo charcoal powder. I feel too much black after slicing. If there is less, the pattern will look better.
