The fermentation time was about 50 minutes at 25 ℃.

Step 7: press the air out of the fermented dough, divide the dough into 6 equal parts, knead it round, cover it with plastic film or wet cloth, and wake up at room temperature for 10 minutes.

Step 8: after waking up, knead round again and put it on the baking tray for final fermentation. Generally speaking, the final fermentation temperature is 38 ℃ and humidity is 85%. About 40 minutes.

Step 9: after fermentation to twice the size, brush a layer of whole egg liquid on the surface of dough.

Step 10: put the bread into the oven preheated at 180 ℃ and bake for about 13 minutes until the surface of the bread turns golden.

High gluten flour: 150g

Dried Cranberry: 45g

Cream cheese: 75g

Whole egg: 45g

Whole milk: 70g

Fine granulated sugar: 30g

Salt: 2G

Dry yeast: 5ml

Note: 1, according to the different water absorption of flour, please adjust the amount of milk, knead into a soft dough. Milk with ordinary market full fat milk can be. 2. Cream cheese is a kind of soft cheese, which is also the most commonly used raw material for making cheese cake.
