Introduction:

Production steps:

Step 1: mix flour, 50g butter, 70g sugar, yeast, milk and 40g egg.

Step 2: knead into a smooth dough.

Step 3: wake up in a warm place for 1.5 hours.

Step 4: wake up the dough and exhaust, knead until it spreads out.

Step 5: divide the dough into small equal sized dough and let it stand for 15 minutes.

Step 6: mix the remaining 50g butter, 80g flour, 50g sugar and 30g eggs.

Step 7: stir and mix to make pastry.

Step 8: knead the dough after standing, and then knead it into a ball shape, gently press flat. (don't press too flat)

Step 9: spread a portion of the pastry evenly on the dough.

Step 10: use a clean ruler to press out a grid of the same size, and finally wake up to twice the size.

Step 11: then brush a layer of egg on the surface.

Step 12: bake at 180 degrees for 15 minutes.

High gluten flour: 300g

Yeast powder: 4G

Milk: moderate

Egg liquid: right amount

Sugar: 120g

Note: 1. When the dough wakes up, it should be covered with wet cloth or plastic film to avoid the skin hardening. 2. Don't put the pineapple bag in the oven to wake up, otherwise the surface will melt. 3. Egg liquid is whole egg liquid.
