Truffle risotto
Introduction:
"It was late autumn, so I decided to cook some sweet meals. In the morning, we stewed chicken soup, which is a good material for risotto. The so-called Italian risotto refers to the rice which is stir fried in butter and then stewed in gravy or vegetable soup. The rice absorbs all the juice and water without adding water. This dish originated from the rice producing areas in northern Italy. If you go to Milan, you will see many restaurants serving this staple food, and they have their own different brand tastes. However, its characteristics can be summarized by several key words: delicious, rich, mellow, thick and smooth. It is one of my favorite staple food. Although risotto seems to be just a plate of rice, it is a high-end Italian food. It is usually only served in authentic Italian restaurants. The reason may be that it takes a long time to cook and the materials are exquisite. As the main course, it usually has vegetable salad with side dishes. Common Italian risotto has seafood, mushroom, ham, chicken, red wine, beef sauce and so on. Because there are mushroom and truffle at home, mushroom and chicken soup are always the best partners, so I decided to use these two kinds of fungi with chicken soup to make a truffle chicken stew. Like many other dishes that take a long time to cook, a good risotto also needs time and patience to stew. For the sake of delicacy, this time and patience is worth it. Fortunately, the process is not complicated. The risotto made of rice is delicious, thick and smooth, with rich milk flavor. The mushrooms are tender and juicy, and the truffle adds a unique flavor and texture
