Introduction:

Its raw materials are nothing more than granulated sugar, flour and small sugar. Small sugar is commonly known as thin."

Production steps:

Step 1: dissolve yeast in warm water and let stand for 5 minutes.

Step 2: add yeast water to the flour and form a soft dough, cover it with plastic film and ferment for 1-1.5 hours at room temperature.

Step 3: ferment to 1.5 to 2 times of the original size, showing honeycomb shape; gently squeeze the dough by hand to remove bubbles.

Step 4: add a little alkali to the fermented dough and knead until the dough is firm and has a little alkali smell.

Step 5: build a wall of flour in the basin and pour maltose into the center.

Step 6: divide the maltose into a paste with flour around, then pinch the flour to the center and knead it into a ball.

Step 7: divide the fermented dough and sugar dough into equal portions.

Step 8: roll the dough into a finger thick rectangular piece with a rolling pin.

Step 9: fold two layers of fermented noodles with one layer of sugar noodles. (brush a little water between the cakes when stacking them to prevent them from loosening when frying)

Step 10: cut the folded dough into small rectangular strips three fingers wide.

Step 11: thin one end of the cake to form a slope.

Step 12: cut the dough into two finger wide squares, fold the two ends together, and cut a knife edge in the middle.

Step 13: open it, turn the thin side in, and fold the thick side to form an ear shaped blank.

Step 14: make some green ears.

Step 15: heat the oil in the pan to 50%, fry the green body in the oil, remove it when golden, and drain the oil.

Step 16: pour in the maltose syrup while it's hot, soak it thoroughly, then take it out and let it cool.

Note: 1, fermented noodles mixed with alkali noodles judgment method: (1) smell with a little bit of alkali flavor; (2) noodles and do not touch hands; (3) and good noodles to have toughness. 2. The ratio of sugar flour is: flour 1: malt sugar 23, the green body fried with 50% deep fried golden. 4. Fried ears must be soaked in sugar when they are too hot.
