Circular bean paste bread
Introduction:

Production steps:
Step 1: set aside the bean paste filling.
Step 2: make the dough ready.
Step 3: let it stand for 15 minutes after exhausting.
Step 4: divide it into 60g flour.
Step 5: roll it into a circle.
Step 6: add the filling.
Step 7: like a bun, close the mouth and squeeze it tightly.
Step 8: flatten your mouth down.
Step 9: put it on the chopping board and roll it into a long oval shape with a rolling pin.
Step 10: use a knife to draw oblique knife lines on the long oval as shown in the figure. Scratch to the bean paste filling, do not completely scratch through.
Step 11: turn the dough over, bottom up, and roll along the long side.
Step 12: turn the dough into a circle. Pinch the connection between the head and the tail.
Step 13: oil the baking pan and place the dough on the baking pan.
Step 14: ferment the dough for the second time (the best fermentation environment: temperature 35-38 ℃, humidity 85%, about 40 minutes) until the dough becomes twice the original size.
Step 15: apply a layer of egg liquid to the surface of the fermented dough.
Step 16: Sprinkle sesame seeds on the surface.
Step 17: put into the oven preheated at 175 ℃ and bake for about 15 minutes until the surface is golden.

Bean paste: 360g
Dough: 720g
Oil: right amount
Egg liquid: right amount
White Sesame: right amount
Note: 1. Roll the dough into a circle, and pinch the place where the head and tail are connected. 2. Brush oil on the baking tray to prevent sticking on it. 3. Use a small knife to draw a diagonal knife pattern on the long oval, and then to the filling of bean paste, without completely cutting through.
