Production steps:
Step 1: raw materials: Flammulina velutipes, carrot, cucumber, shallot. Flavor juice: vinegar, soy sauce, salt, honey, cooked sesame.
Step 2: cut cucumber and carrot into filaments, remove the root of Flammulina velutipes and cut shallot into small sections.
Step 3: add water and salt into the pot, boil the water and pour in Flammulina velutipes.
Step 4: blanch for 10 seconds and remove the supercooled water immediately. Drain the Flammulina velutipes and put them on the plate. Add the shredded cucumber and set aside.
Step 5: put oil in the pot (it's better not to put oil with strong fragrance, otherwise it will cover up the flavor of scallion oil itself), add scallion.
Step 6: simmer slowly until the color is yellowish in medium heat, turn to low heat until it is scorched and fragrant, remove the scallion leaves and filter the oil, or directly remove all of them.

Note: * you can make more scallion oil at one time. After cooling, keep it in a dry glass bottle for refrigeration. However, I think it's better to make it now. The fragrance is still there.
