Introduction:

Production steps:

Step 1: separate the egg yolk from the protein, and pour the protein into a container without oil and water. Add 40g soft sugar, 30g salad oil and milk coffee to the egg yolk. Stir well. Pour in the sifted low gluten flour. Mix well and set aside. (in a hurry, I forgot to shoot the raw materials and yolk paste ~ excuse me!)

Step 2: 40 g white granulated sugar can be divided into two times to add protein, using electric beater to beat until neutral foaming. Add 1 / 3 of the whipped protein into the coffee egg yolk batter, cut and mix it, then pour it back into the remaining 2 / 3 of the protein batter, cut and mix it lightly until the mixture is complete (my mother repeatedly told me that the process should be fast, otherwise it will be defoaming!).

Step 3: preheat the oven at 180 ℃ for 5 minutes while beating the protein. Pour the completely mixed cake paste into the mold, knock it twice on the table, shake out the bubbles, which is conducive to the success of the later stage. Put it into the oven, bake at 165 ℃ for 6 minutes, then bake at 150 ℃ for 38 minutes, and get out of the oven.

Step 4: turn the cake upside down and let it cool to demould.

Step 5: when the cake is cool, cut it into small pieces for easy taste and preservation.

Materials required:

Egg: 50g

Soft sugar: 40g

White granulated sugar: 40g

Low gluten flour: 90g (six inch mold)

Instant coffee: 6g

Milk: 40g

Salad oil: 30g

Note: 6 inch cake, add 6G coffee, taste light. If you want to taste more rich coffee flavor, you can increase the amount of coffee~
