Introduction:

Production steps:

Step 1: half a chicken (because I bought it frozen, I soaked it in ginger water for half an hour).

Step 2: take out chopped pieces, boil pepper water, water open chicken, cooking wine 1 tbsp, do not cover the pot, boil for 3 minutes, take out cold water to wash clean.

Step 3: soak the Agrocybe aegerita soft (you can wash it first, put it in warm water, boil it over low heat, and then soak it for half an hour, because the Agrocybe aegerita is a little hard, and it tastes worse if it doesn't soak well).

Step 4: heat three tbsp oil in the pan, stir fry the chicken over high heat, the skin of the chicken turns yellow, and the meat is slightly dry.

The fifth step: stir fry the onion, ginger, garlic and fragrant leaves to make the scent, put a spoonful of soy sauce, half a spoonful of sugar, and half a spoonful of Baijiu (can be replaced by other wine, when the country was not cooking wine when young).

Step 6: add tea tree mushroom, stir fry for a while, add warm water, bring to a boil, simmer for 40 minutes to an hour and a half. Add salt, five spice powder, monosodium glutamate, and then boil over medium heat for a while. Sprinkle coriander and shallot powder out of the pot.
