Cranberry toast

Introduction:

Production steps:

Step 1: weigh the high gluten flour, sugar, salt and eggs respectively, put them into the mixing basin of flour mixing machine and mix well.

Step 2: add yeast water mixed with warm milk and stir slowly for 2 minutes until the dough is smooth. (note that yeast should not be put together with sugar and salt to avoid dehydration failure of yeast)

Step 3: add the dried Cranberry which is washed and drained, and mix slowly.

Step 4: put the dough into a container, cover it with plastic wrap and put it in a warm place to wake up.

Step 5: wake up to twice the size.

Step 6: Sprinkle high gluten flour on the chopping board, take out the dough, divide it into 4 parts, each about 315 grams of dough, round, cover with plastic film, relax for 15 minutes.

Step 7: take a dough and flatten it by hand. Roll it up and down from the center of the dough with an exhaust rolling pin to form an oval dough.

Step 8: after turning over, fold down one third from top to bottom and press down.

Step 9: fold one third from the bottom up and press.

Step 10: roll the top down with the exhaust rolling pin from the center of the dough to the same width as the toast model.

Step 11: turn the dough over and roll it from top to bottom.

Step 12: after rolling into a cylinder, pinch the necking.

Step 13: put the rolled cylindrical bread billets in two groups with the mouth closed down into the toast mold, cover them with plastic film for final fermentation.

Step 14: ferment until the toast is full.

Step 15: brush with a thin layer of whole egg.

Step 16: put the cut butter bar between the two dough.

Step 1: preheat the oven at 190 ℃ for about 17 minutes.

Step 18: demould immediately after discharging.

Fine granulated sugar: 60g

Dry yeast: 7g

Salt: 5g

Egg: 120g

Milk: 350g

Dried Cranberry: 150g

Whole egg: a little

Butter Stick: right amount

Note: mold: Sanneng 450g toast mold (2 portions)
