Red Bean Bun with pumpkin honey

Red Bean Bun with pumpkin honey

Introduction:

"The golden pumpkin gives people a feeling of autumn harvest."

Production steps:

Step 1: peel the pumpkin and cut it into pieces. Steam it over high heat. (about 20 minutes)

Step 2: prepare flour, sugar and yeast powder.

Step 3: take out the steamed pumpkin while it's hot, mash it with white sugar and let it cool. Add proper amount of flour, knead and pour yeast water (use about 30 ℃ to boil in advance), and knead it into a smooth dough. (it can be rubbed and beaten like rubbing clothes) cover it and let it ferment. (the temperature is low in winter, it takes a long time)

Step 4: homemade honey red beans: soak red beans overnight in water, put them in a casserole, add water without beans, bring to a boil over high heat, boil slowly over low heat, and add sugar.

Step 5: exhaust the fermented dough and divide it into equal parts. Just like baozi, close the dough down, press it into an oval shape, and then use a knife to make a few cuts on the dough carefully for secondary fermentation (about 15 minutes).

Step 6: put the fermented bean buns into the steamer (cold water), turn off the heat 15 minutes after boiling, continue to simmer for 10 minutes, and then open the lid.
