Qimen black tea, short for Qihong, is the only black tea among the top ten famous teas in China. It is named after Qimen County, Anhui Province. Qimen has a long history of tea production, which can be traced back to the northern and Southern Dynasties. In 1876, Qimen black tea was created successfully. Once it came out, it was famous at home and abroad for its outstanding quality. In 1915, Qi Hong participated in the Panama Pacific International Exposition and won the gold medal. In 1987, Qihong won the gold medal of "the 26th World high quality food selection conference", and Qimen was also named "the hometown of Chinese black tea" by relevant state departments.
The traditional Qimen black tea is all handmade, and its quality depends on the processing time, so Qihong is also known as "Qimen Gongfu". Qihong production technology is divided into two parts: primary production and refining. The primary production includes withering, rolling, fermentation, drying and other processes, while the refining includes screening, cutting, air separation, picking, reheating, homogenizing and other processes. It is made of Qi red zewurun, with tight and thin strips and beautiful sharp edges. When brewing, the color of the soup is red and transparent, and the bottom of the leaves is bright red. Qihong's most attractive aroma is its fragrance, which is called "sugar fragrance" or "apple fragrance" by tea experts at home and abroad. It also contains orchid fragrance, long-lasting fragrance, and has the reputation of "Qimen fragrance". Therefore, Qihong ranks first in the world.
In recent years, due to the influence of tea market at home and abroad, the sales of Qimen black tea is not smooth, and the traditional hand-made technology is also lack of successors. To this end, Qimen County Party committee and government specially formulated the development plan and took a variety of effective measures to promote Qihong production, in order to revitalize and carry forward the traditional Qimen black tea production technology.
