A brief introduction to Zhoucun pancake making techniques:

Applicant: Zibo City, Shandong Province

Zhoucun Shaobing is a local specialty of Zhoucun in Shandong Province. It was introduced into the imperial court as a tribute in the late Qing Dynasty. During the spring and Autumn period and the Warring States period, Zhoucun belonged to the state of Qi with developed commerce and profound culture. In the middle of Ming Dynasty, Zhoucun had become a famous local market in Shandong Province, where merchants were concentrated and flourished. Zhoucun pancake is made of flour, sesame seed, sugar or salt. It is famous for its thinness, crispness, fragrance and crispness. "Thin" means that the pancake is as thin as a piece of paper. When you pick it up and fold it, it will make a "brush" sound; "crisp" means that the pancake will break when you chew it and fall to pieces when you fall to the ground; "fragrance" means that the pancake is not greasy when you chew it for a long time, and the more you chew it, the more fragrant it will be, and the aftertaste will be endless; "crispness" and crisp complement each other, giving you a better taste. The key to success of Zhoucun pancake lies in its unique traditional craftsmanship, raw material formula, extension molding and baking. Baking mainly depends on the heat time. The so-called "three points and seven points of fire" means that if you are not an expert and do not master the skill of baking well, the quality of pancakes will not be guaranteed.

After the sixth year of the reign of Emperor Guangxu (1880) of the Qing Dynasty, "juezhai" bakery used paper packaging which did not pollute the environment. In the 1950s, "juezhai" was incorporated into Zhoucun food factory, becoming the predecessor of Zhoucun Shaobing Co., Ltd. As the successor of a century old brand, Zhoucun Shaobing Co., Ltd. has inherited Zhoucun Shaobing production skills and further carried them forward, winning a good social reputation.
