Hot and Sour Rice Noodles

Introduction:

Production steps:

Step 1: Chop green onion, ginger and garlic, chop mustard and peanuts, wash lettuce, and choose a long section of about 8 cm

Step 2: bring a large pot of water to a boil, add 3 grams of salt, add sweet potato flour and cook for about 5 minutes (I use wide flour, taste stronger!)

Step 3: while cooking sweet potato powder, heat the frying pan. After the pan is hot, pour in the edible oil and sesame oil. 3 or 4 seconds later, add the onion, ginger and garlic to stir until fragrant. Then add the shredded mustard to stir fry evenly (in order to increase nutrition, I also put some diced Lentinus edodes in it, which tastes wonderful!)

Step 4: pour soy sauce, vinegar and chili noodles into the frying pan, then pour in a large bowl of water to boil, add the sesame paste, sugar and the remaining 3 grams of salt to taste (the sesame paste in this step is also added according to my own taste, which is very mellow. For those who like sesame paste, please refer to it!)

Step 5: put the cooked sweet potato powder and the selected lettuce into the boiling soup for about 30 seconds, and wait for the sweet potato powder to absorb and the color of the soup to become darker

Step 6: put sweet potato flour, lettuce and soup into a bowl, sprinkle with red oil, sprinkle with chopped green onion and peanuts

Step 7: this hot and sour powder is made by others, but it has its own flavor, which is very delicious! Interested friends can try their own, super simple, delicious! Highly recommended! I'm just lazy. I'll eat up after I finish. I haven't left a picture. I'll talk about it later! ha-ha...

Note: Although we haven't researched the most authentic method of hot and sour powder, we can easily make hot and sour powder with strong aroma by mastering five tips based on today's attempt: first, boil powder with salt, salty taste first. Adding salt in the hot water of cooking sweet potato powder can make the sweet potato powder absorb the salty taste in the process of ripening, and it won't taste bad. Second, stir fried raw materials, fragrance fully released. After eating a lot of hot and sour noodles, we put onion, ginger, garlic and mustard directly in the soup, but if these materials are fried with oil, the aroma can be fully released, and then boiled with water, the absolute aroma is delicious. Third, vinegar before water, the taste is completely integrated. If you pour the vinegar into the hot and sour powder directly, you will inevitably feel the sour taste is very hard. But if you pour the vinegar, soy sauce and chili noodles into the fried onion, ginger and garlic, and then add water to bring to a boil, the soup will be full of sour, hot and salty. Fourth, return to the pot for a moment to make the flour fully tasty. When the cooked sweet potato powder is poured into the soup again and cooked for a while, the sweet potato powder can fully absorb the taste of the soup without completely separating the taste of the soup. Fifth, add sugar out of the pot to highlight the hot and sour taste. When cooking hot and sour dishes, adding a little sugar before leaving the pot is absolutely the finishing touch.
