Production steps:
Step 1: put the flour into the basin, add appropriate amount of warm water several times, stir it into flakes, and knead it into a smooth dough.
Step 2: cover with wet cloth and cover for 20 minutes.
Step 3: wash the pork, add a little water several times and chop it into mince.
Step 4: wash the green pepper, remove the pedicels and seeds, cut into shreds, and then cut into pieces.
Step 5: remove both ends of bean sprouts and clean them.
Step 6: cut the bean sprouts into small pieces.
Step 7: blanch in boiling water, add a little cooking wine, about 1 minute until the color becomes transparent.
Step 8: add scallion, minced ginger, salt, chicken essence, sugar, cooking wine and soy sauce to the meat stuffing, and stir in one direction. Pepper, bean sprouts, sprinkle a little salt and chicken essence, mix well, into the meat, add oyster sauce, sesame oil, oil, mix well into dumpling filling.
Step 9: sprinkle some flour on the dough, take out the battered flour, put it on the dough and knead it again. Take part of it and knead it into long strips. Then cut it into small pieces and roll it into dumpling skin.
Step 10: add the right amount of dumpling stuffing.
Step 11: after making dumplings, put them in the corner of the flour table.
Step 12: when making enough dumplings for steaming, add water into the steamer, bring to a boil, put in the wet drawer cloth, and put in the dumplings. Steam for about 12 minutes, then turn off the heat and remove the pan.

Note: 1. Bean sprouts are easy to change color, wait until other materials are ready before processing bean sprouts. Put a little cooking wine to remove the fishy smell. 2. If there is no drawer cloth at home, brush a little oil on the curtain to prevent sticking. 3. According to the size of dumplings, the steaming time can be adjusted appropriately. When placing dumplings, some gaps should be left in the middle to avoid adhesion.
