Step 1: main raw materials
Step 2: wash the inside and outside of the casing.
Step 3: dice the pork.
Step 4: Chop ginger into minced ginger, the finer the better.
The fifth step: put the five kilograms of pork into the pot, add 50 grams of salt, 100 grams of sugar, 100 grams of high Baijiu, ginger, white pepper, MSG.
Step 6: mix all the ingredients well and marinate for 1 hour. Make it fully tasty.
Step 7: fill the casing with a funnel to make it as full as possible.
Step 8: fill the sausage and form a proper length with string.
Step 9: dry in a cool, well ventilated place (I've been drying for a week).
Step 10: take off the dried sausage and wash it.
Step 11: steam in a steamer for 25 minutes.

Pork: 5 jin
Salt: 50g
Sugar: 100g
Highly Baijiu: 100 grams
Ginger: right amount
MSG: right amount
White pepper: right amount
Casing: appropriate amount
Note: I use five Jin pork, the ratio of weight to lean is 2:8, salt is 50 grams, sugar is 100 grams, Baijiu is 100 grams. However, it can also be added according to personal taste. I like to put more ginger, so I put half a jin of ginger. If I don't like it, I can put less or no ginger.
