Step 1: wash the fish and set aside

Step 2: cut the body of the fish into pieces. It's better to cut it smaller. The fish I bought is a little big and hard to make

Step 3: wash the cut fish twice with water, then soak in light salt water for 5 minutes, remove and drain

Step 4: marinate the fish with salt, cooking wine, pepper and ginger for 30 minutes

Step 5: add starch and mix well

Step 6: heat the oil in the pan to 70%, fry the fish in high heat until golden

Note: fried fish can be made into soup, or fried with green pepper. If you want to make the fish darker, you can add some soy sauce
