Production steps:
Step 1: wash the pork head and cut it into small pieces. Soak it in cold water to remove the blood.
Step 2: prepare the seasoning.
Step 3: put the pickled pork head into the frying pan. Because the smell of pork head is too strong, we should also drop some white vinegar, add some pepper and star anise, and ginger slices to taste. In general, do not cover the lid when washing water, so that the odor and houtty smell can volatilize well.
Step 4: soak until the meat changes color and the skin becomes swollen. Then put it in cold water and dispose of it again. (at this time, you can pluck the hair. Some pigskins will be covered with white things, and you also need to scrape them with a sharp knife.)
Step 5: This is the pig head meat processed again. It's already very clean. Put it in a deeper pot and prepare to marinate.
Step 6: add water to the pork. Add the right amount of salt (it doesn't matter if you can put more salt, the marinated meat needs salt to taste), white vinegar, pickled orange peel (I dry the orange peel by myself, I need to use boiling water to soak the extra bitter water before using), the remaining pepper and star anise (I bought a total of one yuan), the right amount of seasoned soy sauce, ginger and garlic, boil over high heat (I still don't cover before boiling).
Step 7: when the ingredients in the pot are bubbling, turn the heat to low, cover and simmer slowly.
