Production steps:
Step 1: let's take a group photo of the ingredients. Rock sugar can be added or not. My family has diabetes patients, so I use wolfberry instead of rock sugar, so there is no rock sugar in the ingredients. If you like, you can add some.
Step 2: break donkey hide gelatin and soak it in yellow rice wine until it is basically boiled, which can reduce the boiling time. It is best to soak donkey hide gelatin in rice wine for 2-3 days in advance. If you soak it for a few hours, you'll have to work hard to boil it. It's quite a fire. I used half a catty of yellow rice wine to soak half a catty of donkey hide gelatin for 2 days, and it took 20 minutes to boil it.
Step 3: process sesame and walnut. There are ready-made cooked sesame and walnut kernel is best, if not, it must be processed first, because cooked taste better. First, wash and dry the raw sesame and walnut kernel, then put them into the frying pan and fry them over low heat. I use an electric cake pan. Put the sesame in the pan, turn on the switch, and turn it over with a wooden spoon for about 5 minutes. Turn off the fire and continue to stir fry. When the temperature drops down, the sesame will be fried and put in the air. Walnuts are treated in the same way.
Step 4: Cool sesame and walnuts, prepare crushed jujube and wolfberry. Wash the jujube, remove the stone and chop it up. Wash and dry the wolfberry.
Step 5: prepare the material and cook it. Pour the soaked donkey hide gelatin into a casserole (some say that you can't use an iron casserole, so here you use a casserole). Keep stirring over low heat to prevent paste. When the donkey hide gelatin is basically boiled, you can add rock sugar and boil until there are big bubbles and slurries.
Step 6: quickly pour sesame, walnut and wolfberry into the pot, stir quickly, add red dates, stir well, turn off the fire immediately, and pour into the container. I use the baking tray of the oven, which is covered with tin foil (or preservative film), which helps to take down the boiled donkey hide gelatin cake from the mold. I don't think oil brushing is very effective.
Step 7: when the donkey hide gelatin paste doesn't stick to your hands, cover it with fresh-keeping film, roll it flat with a rolling pin, put it in the air, and I put it in the refrigerator.
Step 8: take the whole Ejiao cream out of the container and cut it into appropriate size.

Note: 1, donkey hide gelatin had better be soaked in advance. 2. Donkey hide gelatin is very sticky, it's better to use non stick pot, or it's hard to brush the pot. 3.
