Introduction:

"Tofu stuffed with meat, this is an interesting dish: small oil tofu stuffed with meat, so that the original flavor of tofu has become unique connotation. To make tofu stuffed meat naturally needs tofu foam. There are some ready-made oil tofu foam in the market, but I always feel that what they do is not as solid as what we do at home. In fact, it's very simple to make tofu at home, which can be said to be "zero difficulty". But also need to use a little careful inside, otherwise fried bean bubble or too soft, or fried too hard to eat. In order to increase the delicious feeling, I added fresh shrimp to the meat stuffing, so the tofu stuffed meat taste is not monotonous

Production steps:

Step 1: cut the lean pork into strips, add a little shredded ginger and chopped scallions.

Step 2: pour in zanthoxylum oil to remove the smell, and it's easier to chop the meat.

Step 3: remove the head of the shrimp, remove the shrimp line, shell and chop.

Step 4: put the minced meat and shrimp into a clean container and pour in a little delicious soy sauce.

Step 5: Sprinkle with salt.

Step 6: stir well and marinate for 30 minutes.

Step 7: use the time of marinating stuffing to make oil bean curd, and cut the bean curd into large squares (3-4cm, more meat stuffing).

Step 8: pour vegetable oil into the pot. When the oil is 70% hot, pour in the tofu and fry it over low heat.

Step 9: turn the tofu pieces frequently when frying, so that the fried tofu will be more even.

Step 10: wait until the tofu is deep fried and the surface is golden. After the tofu is slightly puffed, take out the oil and set it aside.

Step 11: use a knife to make a small cut on the dried tofu.

Step 12: use chopsticks to put the pickled stuffing into the tofu carefully, and then smooth the incision.

Step 13: start the oil pan, add shredded ginger and scallion, and saute until fragrant.

Step 14: pour in the oily tofu and stir fry a little.

Step 15: pour in 2 tbsp of delicious soy sauce, add some water and bring to a boil.

Step 16: after boiling for 10 minutes, pour in the washed rape and soaked Auricularia auricula, and cook over low heat for 5 minutes.

Step 17: sprinkle in a small amount of refined salt, thicken with starch, and collect the juice.
