Introduction:

"This stewed chicken is cooked in accordance with the traditional folk practice of Shaanxi Province through three processes of pickling, frying and steaming. It is also a new year's dish carefully prepared by many mothers in Shaanxi Province for the new year."

Production steps:

Step 1: chop the chicken into big pieces of walnuts and rinse them.

Step 2: prepare dry starch, scallion and ginger slices, star anise, cinnamon and leek.

Step 3: tear the soaked fungus into small pieces.

Step 4: add salt.

Step 5: put cooking wine.

Step 6: add soy sauce, stir well, marinate for 10 minutes.

Step 7: add water to make starch paste.

Step 8: pour the chicken into the starch paste.

Step 9: make the chicken pieces evenly covered with paste.

Step 10: stir fry in a frying pan over high heat, add oil, heat to 70%, and fry the chicken with paste.

Step 11: put all the chicken in turn.

Step 12: turn the chopsticks during frying to make the chicken pieces heated evenly.

Step 13: deep fry until golden and remove.

Step 14: put into the steaming bowl and add soy sauce.

Step 15: Sprinkle the salt evenly on the chicken.

Step 16: pour in the cooking wine.

Step 17: add onion and ginger.

Step 18: add star anise and cinnamon.

Step 19: add appropriate amount of water (about 2.5 tbsp).

Step 20: gently shake the steaming bowl so that the seasoning is evenly distributed on the chicken, put it into the steamer, bring to a boil over high heat, cover it and steam over medium heat for 10 minutes.

Step 21: steamed chicken.

Step 22: cover the steaming bowl with a flat plate.

Step 23: put the chicken on the plate and pour the juice into the pot.

Step 24: add leek, monosodium glutamate, Auricularia auricula, appropriate amount of water, and then set a good taste, thicken with wet starch, pour in sesame oil.

Step 25: pour on the chicken.

Note: no leek can choose garlic seedlings. You can also choose chicken or three yellow chicken.
