Anhui cuisine: Stewed tofu in Tunxi
Introduction:
"Tunxi is a district of Huangshan City. It's a local dish. It's very delicious."
Production steps:
Step 1: raw materials: half piece of old tofu, 1 small piece of sauerkraut, 3 mushrooms and 1 red pepper.
Step 2: dice tofu.
Step 3: dice mushrooms, red pepper and sauerkraut.
Step 4: pour proper amount of oil into a small pot and heat it for 8 minutes.
Step 5: pour in diced tofu and fry until golden on both sides.
Step 6: take out the dried tofu and drain the oil.
Step 7: cut ginger, garlic and scallion.
Step 8: 1 spoonful of broad bean sauce made by mom. There is no Hu Yumei broad bean sauce from Anhui Province.
Step 9: heat the pan with oil, pour in minced ginger and garlic, and saute until fragrant.
Step 10: pour in diced sauerkraut and diced mushrooms.
Step 11: stir fry the mushrooms over high heat until soft and fragrant.
Step 12: pour in the fried tofu.
Step 13: add a spoonful of sauce and stir well.
Step 14: pour in red pepper and stir fry until it is unripe.
Step 15: add half a teaspoon of sugar.
Step 16: pour in a little chicken essence.
Step 17: Sprinkle with scallion and stir well.

Note: 1. The whole process can not put water, stir fry quickly! The total stir frying time is about 5 minutes. 2. No salt, both pickles and sauces are salty!
