Production steps:
Step 1: wash the pig's ears with salt.
Step 2: put it into a pot of boiling water and blanch until the water boils again. Do not cover the process, you can remove the fishy smell.
Step 3: take it out and wash it with warm water.
Step 4: shave the pig's ears.
Step 5: prepare the seasoning.
Step 6: add marinade and water into the pot (the amount of water can be parallel to the pig's ears), and pour in dried pepper and ginger slices.
Step 7: pour a little soy sauce and cooking wine (you can remove the smell and color) and sprinkle some thirteen spice powder.
Step 8: after boiling, put in the pig ears.
Step 9: open the lid and bring to a boil, then cover and simmer for 40 minutes. (turn over the pig's ears to avoid too light coloring on one side)
Step 10: don't open the lid, turn off the heat and simmer for more than 3 hours.
Step 11: it's cold at this time. You can take it out and cut it into strips.
