Learn to make stewed noodles

Introduction:

"I've seen several articles about making stewed noodles on the Internet. So I'm learning to make a fool of myself. I don't know if the bowl of noodles I made is stewed noodles. Anyway, it's delicious, and the name is secondary. It doesn't matter whether it's authentic or not."

Production steps:

Step 1: put the flour into a large bowl, add some salt and mix well. Then pour the water into the flour and mix it into small pieces with chopsticks. Put the flour and dough into a smooth, non stick dough in the bowl and wake up for about half an hour

Step 2: Sprinkle dry flour on the chopping board, flatten the dough on the chopping board (if there are too many dough, divide it into several small dough), and then roll it into large pieces with a dough stick

Step 3: pat dry flour on both sides of the dough, then lift and fold it in half, and cut it into strips with a knife. Then slowly lengthen and thin the cut noodles. If the noodles are too wet, sprinkle some powder on the opened noodles to avoid adhesion

Step 4: bring the water to a boil, pour some oil, first blanch the cabbage, put it in the bowl to make the base, then put the noodles into the pot to blanch, pick it up and put it in the bowl with cabbage

Step 5: soak the mushrooms and fungus and cut them into small pieces. Cut the carrots into small pieces. Cut the cabbage in half. Beat the eggs and fry them. Cut them into strips or small pieces. Cut the green onion and coriander into small pieces

Step 6: cut pork into thin strips, add salt, soy sauce, cornmeal and pepper, mix well and marinate for 10 minutes. Cut shallot and coriander into small pieces. (5) Step 6: make the noodles before they are cooked

Step 7: heat the oil in another pot, saute the minced garlic and ginger until fragrant, put the pork in the pot and disperse it, then stir fry the mushrooms, dried fungus and carrot in turn, pour them into 2-3 bowls of boiling water. After boiling, put the eggs in the same pot, add salt and a little cooking wine for seasoning, then pour some raw soy sauce for color and taste improvement. Finally, add some chicken essence, sprinkle with scallion and coriander, and then turn off the fire

Step 8: pour the cooked soup into the bowl of noodles to start the chopsticks
