Fried Tofu with tiled fish

Introduction:

Production steps:

Step 1: after the fish is treated, take out the fishy line, cut into 8-10 pieces of tofu evenly, and cut into 1cm thick, square pieces of length and width

Step 2: simmer the cut fish with salt, cooking wine, soy sauce, chicken essence and oyster sauce for 1-2 hours, then deep fry the tofu to golden yellow

Step 3: spread starch evenly on the salted fish and oil it

Step 4: stir fry onion, ginger, garlic and Sichuan pepper with less oil in the skillet. After frying in sauce, add salt, monosodium glutamate, chicken essence, oil consumption, add appropriate amount of water and boil for 10 minutes. Remove all seasonings

Step 5: add the fried fish and tofu, and simmer for 40 minutes. Garnish with coriander or sesame oil.

Carp: one kilogram

Tofu: one piece

Scallion: right amount

Soy sauce: right amount

Red oil: right amount

Note: tofu and fish to use fire, deep fried hard as well, stew will not get rotten
