Production steps:
Step 1: prepare the required materials.
Step 2: peel and wash the lotus root and cut it into slices.
Step 3: soak lotus root slices in cold water for 10 minutes and change the water twice on the way.
Step 4: put water in the pot and bring to a boil. Pour in lotus root slices and blanch them.
Step 5: pick up the boiled lotus root slices.
Step 6: cool in cold water.
Step 7: then remove and drain.
Step 8: swing into the disk again.
Step 9: put the sugar in a small bowl, pour in the right amount of rice vinegar and mix well. (mix until sugar dissolves completely)
Step 10: pour the sweet and sour juice into the lotus root slices.
Step 11: wash and shred red pepper.

Step 14: pour the oil on the lotus root.

Note: sweet and sour degree of sweet and sour juice can be adjusted according to their own taste. Lotus root contains a lot of starch, which can be removed by soaking. After blanching and scalding, the lotus root becomes more refreshing and sweet.
