Knead Chinese toon buds
Introduction:
"Chinese toon sprouts are seasonal delicacies. Generally, it's best to eat Chinese toon from Qingming to Guyu. After Guyu, Chinese toon sprouts become lignified. After Guyu, Chinese toon sprouts grow fastest, and the taste of Chinese toon is also lost fastest. Therefore, the days after Qingming Festival are the most delicious and tender time for Chinese toon sprouts. Every year, I always buy some Chinese toon sprouts, wash them, knead them with salt, ferment them slightly and give out fragrance, or pack them in bags or bottles, then freeze them for winter consumption. The best choice for Chinese toon bud is the one that can be reached from the farm tree; the leaf stalk is fat, the leaves are green, and the top of the new leaf bud is maroon, so the Chinese toon is the most tender and fragrant, and the raw food is the most delicious. Knead toon bud, with a "knead" word, it can be seen that people love and care for toon bud, and only kneaded toon bud can really send out its due flavor of Toon. Only "kneading" can make the salt spread evenly in the Chinese toon sprout, and finally make the delicious Chinese toon sprout pickle. Some people like to be lazy and directly sprinkle coarse salt on the Chinese toon sprouts for pickling. In this way, the salt particles are scattered on the Chinese toon sprouts, and the Chinese toon sprouts have different tastes and uneven salinity. Only after the sprouts are sealed and kept for a week, can the flavor really come out. These well kneaded Chinese toon sprouts have become rare objects in winter. Each time you eat them, you can squeeze out a few, or chop up the noodles, or use them to fry a few eggs... The house is full of incense. "
