The main material of husband and wife lung slice is usually ox tendon, ox heart, ox tendon, ox tongue, ox tripe, ox shutter, etc. (but there is no lung). In fact, it is also called "scrap slice". Husband and wife lung piece of the main effort in boiling red oil and soy sauce, well done, 80% of the success. So I'll explain these two steps in detail
Production steps:
Step 1: the first step: Boil red oil preparation materials: 4 / 3 cup of chili powder, 1 / 4 cup of crushed chili (1 cup = 250 ml, the same below), 1 tablespoon of prickly ash, 3 cloves, 1 teaspoon of cinnamon, 1 teaspoon of fennel, 1 Caogou, 4 star anise, 3 fragrant leaves, 1 small piece of ginger, 3 sections of onion, 1 tablespoon of sesame, 1 section of Arnebia (the above materials are shown in the picture). Add 200 grams of peelless peanuts and 600 grams of salad oil (or vegetable oil).

Step 4: put the above other materials (except sesame) into the oil pan and turn to the minimum firepower immediately. Boil 1 hour later, add sesame and cook for another 15 minutes.
Step 5: pour all the ingredients into a bowl.
Step 6: after soaking for 1 day, remove the residue and drain out the red oil. Save for multiple use.
Step 7: Step 2: prepare soy sauce: 1 cup soy sauce, 3 tbsp soy sauce, 1 small piece rock sugar, 3 tbsp brown sugar, Chinese prickly ash, star anise, fennel, fragrant leaves, ginger and onion. All the above materials are shown in the figure.
Step 8: put all the ingredients into the pot, bring to a boil, and then turn to heat for 30 minutes.
Step 9: filter out the residue.
Step 10: put the soy sauce into the container for storage, and use it for many times.
Step 11: Step 3: cook the beef offal and prepare the red oil juice, then add the right amount of cooking wine, salt, star anise, green onion and ginger to make the beef offal slightly rotten. You can cook the hard cooked parts such as beef tendon and tendon in a pressure cooker.
Step 12: take out the cooked beef offal and let it cool. Cut it into thin slices and put it in a deep bowl.
Step 13: prepare the soup, seasoning it with salt and chicken essence (I use clear chicken soup, which has a taste)
Step 14: make red sauce: the ratio is about: half cup of red oil, half cup of soup, 3 tbsp of soy sauce, half tbsp of pepper powder, 1 tbsp of sesame oil and half tbsp of salt.
Step 15: pour the prepared red oil juice on the beef offal (the amount of red oil juice should be controlled to soak the beef offal in it), add scallion, coriander and fried peanuts.
Step 16: the legendary husband and wife lung slice is ready, drooling!

Note: don't put too many cloves when boiling red oil, it tastes too heavy. Arnebia purpurea is mainly to increase color, no can not put peanuts is to make the boiled red oil more fragrant, but also kill two birds with one stone, fried peanuts can be used as ingredients
