Production steps:
Step 1: get all the materials ready.
Step 2: pour the protein into the egg beater to disperse, squeeze in a few drops of lemon juice, and beat with medium speed.
Step 3: add salt and sugar three times (mix salt and sugar first). When it hits the hard foam protein, there are lines, but they are not very obvious.
Step 4: sift in low strength flour and mix well in an irregular way.
Step 5: mix well and add dried cranberries. Continue to mix irregularly for a few times
Step 6: excessive stirring will lead to protein defoaming, and the baked cake will become hard, so roughly mix well.
Step 7: put the batter into the baking mould. If there is a big angel cake round mould, it's better to use the big mould instead of the small mould in the picture. Preheat the oven at 170 ℃ and bake for 20-25 minutes. After baking, let it cool and separate the edge from the baking mold.

Lemon juice: a little
Low gluten flour: 40
Salt: 1 / 8 TSP
Dried Cranberry: 60g
Note: when the protein is whipped, the fifth level egg beater should use the third level egg beater. After adding lemon juice, add 1 / 3 of the salt and sugar mixture after a little dispersing. When the volume is doubled, add 1 / 3 of the salt and sugar mixture when the protein doesn't drop. When the protein is textured, add the remaining salt and sugar mixture when the protein tip droops.
