Colorful tofu
Introduction:
"Tofu" means "Dufu". Generally, during the new year's festival, every family should buy some tofu for cooking, taking its auspicious mood. Today's dish I call it "colorful tofu", because there are many kinds of vegetables in it, and the color is colorful. In fact, I used some "vegetable heads" from the refrigerator, a tomato, half a cucumber, a carrot, two mushrooms, half a Pleurotus eryngii, and a small piece of tofu. In a word, I used some leftovers from cooking. The cost is only a few yuan. In this day of soaring prices, such a small dish can be said to be economical and affordable. It tastes good and sells well. It doesn't look ugly when served on the new year's Eve dinner table. "
Production steps:
Step 1: cut the bean curd into large pieces about 1cm, and cut garlic and scallion into small pieces.
Step 2: wash and dice the fresh mushrooms.
Step 3: wash and dice carrots and cucumbers.
Step 4: wash and dice Pleurotus eryngii.
Step 5: cut the tomatoes into small cubes after washing.
Step 6: take a clean small bowl, pour in a teaspoon of soy sauce, add a little salt.
Step 7: pour in a teaspoon of sugar, stir well and set aside.
Step 8: pour proper amount of vegetable oil into the pot, heat the oil, add tofu slices and fry over low heat.
Step 9: shake the pan when frying to prevent bean curd from sticking to the pan.
Step 10: fry the bean curd until golden on both sides, and set aside.
Step 11: blanch the carrot, mushroom and apricot abalone mushroom.
Step 12: blanch the water until the diced vegetables are discolored, then take out the diced vegetables and control the water.
Step 13: saute the scallions and minced garlic in the pan of fried tofu slices.
Step 14: pour in carrots, mushrooms, apricot abalone mushrooms, stir well.
Step 15: pour in diced tomato and cucumber and stir fry over high heat.
Step 16: cook in the sauce.
Step 17: thicken with starch and turn off the heat.
Step 18: pour the fried diced vegetables on the fried tofu while it is hot.
