How to make big and small spiral noodles
Introduction:
"The northerners basically come to the pasta by hand, but the people in other places are not sure. Someone asked me very strangely before, how to make the small spiral noodles (some places call it cat ear, Shaanxi call it hemp food)? Today, I'd like to present its practice in detail and share it with you. In fact, the practice of this helicoid is quite simple, which is to test people's patience. My dear ones, you have to hold it! This kind of small spiral noodles is suitable for stewing with all kinds of fried dishes after cooking, or directly frying with cold water after cooking. It is easier for the elderly and children to digest after eating. There's another kind of big spiral, which I like. I often use it for hot pot or fried food, which is very good. Let's introduce their practices one by one. "
Production steps:
Step 1: mix the flour with warm water to make a soft dough, knead it smooth, cover it for half an hour, knead it twice in the middle.
Step 2: knead the dough again for five minutes, relax a little, and roll it into a half centimeter thick sheet with a rolling pin.
Step 3: cut into strips about half a centimeter wide with a knife.
Step 4: evenly sprinkle a layer of corn flour or dry starch, and rub with hands to make the noodles evenly covered with corn flour, which can effectively prevent adhesion.
Step 5: roll and align the noodles, cut them into small cubes, sprinkle a layer of corn flour, and knead evenly.
Step 6: prepare the grate or sushi curtain. I use the grate made by sorghum rod from my hometown, which is very convenient for holding noodles and steamed bread.
Step 7: take a small dough, put it on the grate and press it gently with your big finger.
Step 8: gently push the big finger forward until the whole spiral surface is formed and completed.
Step 9: if you don't have tools, you can also operate directly on the chopping board. What you do in this way is hemp food without patterns.
Step 10: different spiral surfaces with different patterns are produced due to the force in different pattern directions on the grate.
Step 11: let's introduce the practice of large helicoid. The first four steps are the same as the small spiral noodles, but when cutting, you don't need to cut it so small. Roll the noodles thin and cut them into long strips.
Step 12: put it on the grate according to the pattern direction you like, hold the kitchen knife in your hand, gently press the noodles with the short side of the knife, and hold the knife face with the other hand to prevent slipping.
Step 13: apply force evenly to make the noodles turn up with the knife.
Step 14: continue until a beautiful spiral is created.
