Production steps:
Step 1: wash the octopus and tear off the black skin
Step 2: cut off the head of octopus and cut the claws one by one. If the claws are too long, they can be cut into two sections.
Step 3: blanch the claws of octopus in boiling water and take them out
Step 4: cut the chives into small pieces
Step 5: mix shallot and octopus with mustard, vinegar and a small amount of seafood sauce. A simple dish is finished.

Note: don't throw away the head of octopus. It can be frozen and stewed later. The blanching time of Octopus should not be too long, otherwise the taste is not tender enough.
