A simple and appetizing side dish -- stir fried Douchi with dried radish
Introduction:
"Recently, I always wanted to eat some appetizers, so I bought radish and dried it in the sun. As a result, a little bit of dried radish is not enough to eat, so I temporarily thought of adding some Douchi to stir fry. The taste is first-class. Ha ha. "
Production steps:
Step 1: two white radishes
Step 2: clean the radish and cut it into strips of small thumb size
Step 3: put the cut radish into a large container, sprinkle with sugar, mix well, then sprinkle with a layer of salt, mix well, marinate the radish out of excess water. Sugar is added first to remove the pungent taste of radish
Step 4: after the radish strips are pickled and softened, evenly spread them in the sun. (I just spread it on the balcony to dry. Of course, I have to clean the balcony before I do.)
Step 5: the next day
Step 6: day 3
Step 7: the fourth day.
Step 8: on the fifth day, all the ingredients should be ready to stir fry.
Step 9: first, wash the dried orange peel (dried by myself, I don't have it or I don't want it) and dried radish with clean water, and then soak them in boiling water. Douchi must also be soaked in clean water to remove impurities and excess salt.
Step 10: dice the pickled radish and orange peel. Clean the Douchi and put it on a bigger plate.
Step 11: put the dried radish, orange peel and Douchi together and steam for 20 minutes.
Step 12: set the frying pan on fire, add enough corn oil into the hot pan, bring to a boil, and then add dry pepper to deep fry. (before frying, you have to wash with water. There's too much dust. You must remember to drain the water before frying, otherwise it won't burn your hands.)
Step 13: spread the fried chili on a large plate and let it cool down.
Step 14: put the chilli into the fresh-keeping bag and crush it (remember to put more bags, if it doesn't drop out, and remember to wash your hands with vinegar after rubbing, otherwise it's very spicy)
Step 15: then stir fry ginger, garlic and jasmine with the oil of previously fried pepper.
Step 16: when the ginger, garlic and jasmine in the pot are slightly yellow, add the steamed dried radish to stir fry.
Step 17: wait until the smell of dried radish, pour in the steamed Douchi and stir fry. When stir frying, add crushed pepper, soy sauce, appropriate amount of salt (if you like light can not add salt), a small amount of sugar.
Step 18: wait until the smell of dried radish is out, pour in the steamed Douchi and stir fry over low heat. When stir frying, add crushed pepper, soy sauce, appropriate amount of salt (if you like light can not add salt), a small amount of sugar.
Step 19: stir fry slowly with a low heat until the shovel can't be pushed in the pot. Then turn off the heat and let it cool naturally.
