Production steps:
Step 1: soak the soybeans overnight and beat them into soymilk the next day.
Step 2: beat soybean milk.
Step 3: after the soymilk is almost cool, mix it with flour and yeast to make a smooth dough. Knead a good dough out of about 15 grams, the Monascus powder knead in, to become a red dough.
Step 4: cover with plastic film and ferment the two dough to twice the size. Today, I put it directly in the pot for fermentation. Just cover the pot. It's easier.
Step 5: take out the fermented dough and exhaust it. Divide it into 4 equal parts. The size of my portion is not uniform.
Step 6: take one of them, knead it round, take a small piece from the red dough, knead it round, then flatten it, and use the small head of chopsticks to press two holes to make a pig's nose.
Step 7: dip in some water and stick your nose on the white dough.
Step 8: in the same way, do a good job of pig's ears and eyes, and the lovely pig is finished.
The ninth step: put a good pig in a steamer and put it in a pot for another 15 minutes. Open fire, boil the water in the middle, steamed for 15 minutes, turn off the fire, and simmer for another 5 minutes, then open the lid for OK.
