Braised pig's feet in soy sauce

Production steps:
Step 1: a small piece of cinnamon; a pinch of prickly ash; two star anise; three fragrant leaves.
Step 2: cut the scallion into 3 sections of 5-6cm and 4 slices of ginger.
Step 3: wash the pig's feet and soak them in water for 2-3 hours. After skimming the water, put the pig's feet into the pot, pour in clean water (better than pig's feet), bring to a boil over high heat, continue to cook for five minutes, skim the foam, turn off the heat, and take out the pig's feet.
Step 4: divide the pig's hoof into two parts (this can better taste) and put it into the pot. Sprinkle the scallion, ginger, cinnamon, Chinese prickly ash, star anise and fragrant leaves on the pig's hoof. Pour in water twice as much as the pig's hoof and bring to a boil.
Step 5: after that, add raw soy sauce, soy sauce, cooking wine, salt, thirteen spices and sugar.
Step 6: after boiling, turn to low heat, cover and simmer.
Step 7: simmer for one hour, turn off the heat and put on the plate. (in the cooking process, turn the pig's hooves every ten minutes to avoid pasting the pot. )

Note: to see if the pig's feet are ripe, use a chopstick to confirm. If the pig's hoof is easily pricked through with chopsticks, it means that the pig's hoof is well done. On the contrary, it is not well done.
