In fact, when making hairy tofu, the tofu is usually soaked in water, then taken out and drained, and then sprinkled with some salt on the tofu, and then covered with a thick cloth; placed in a cool and dry place, a few days later, white hairs will grow on the tofu. The vegetable protein contained in tofu will be transformed into a large amount of tyrosine (a kind of amino acid) and basic nitrogen after fermentation, so as long as the "hairy tofu" is fried in oil pan, the taste will be better! Production steps:

Step 1: 12 pieces of hairy tofu.

Step 2: separate each one, rinse with clean water and drain.

Step 3: Chop onion, ginger and garlic.

Step 4: put 1 tbsp salt, half tbsp sugar, half tbsp chicken essence and a little water into a small bowl and mix well.
