Production steps:

Step 2: put the pickled soybeans into the cooking machine, add water and beat them into pulp.

Step 3: sift the battered soybean milk.

Step 4: filter out the residue and pour it into the pot.

Step 5: Boil the soy milk over high heat, then boil it over low heat for 3-5 minutes.

Step 6: pour lactone powder into the container and dilute with a little cold boiled water.

Step 7: after the soymilk is cooked, turn off the heat and let it stand for 20 seconds, then pour 80-90 ℃ hot soymilk into the container.

Step 8: cover a plate and let it stand for 20-30 minutes. Do not move or shake the container at this time.

Step 9: after standing for 20 minutes, the bean curd has solidified, then scoop it up with a small shovel or steel spoon and put it into a bowl.

Step 10: add Yongchuan Douchi oil, spicy Dougan Ding, mustard mustard, fried Dongcai, peanut, garlic, pepper and zanthoxylum oil, chive and coriander to serve.

Step 11: stir well when eating.

Step 12: Note: the self-made method of Yongchuan Douchi oil: chop the right amount of dried Douchi, stir fry it with oil for a while, then stir fry it with dried pepper for a while, add the right amount of water after stir fry, put salt, sugar, chicken essence and a few drops of vinegar in it, boil it for a while, and finally filter out the residue with fine sieve. Dry soybean: 100g

Water: 750ml

Glucolide: 3 G

Stir fried winter vegetables: right amount

Generally, after soaking 100 grams of dry soybeans for 8-12 hours, the actual amount of water is about 250 grams, and the difference between the top and bottom is about 10 grams.
