Good glutinous rice can only be boiled a little, while poor glutinous rice can't be boiled or it's very soft and rotten. I read many friends' diaries that they want to soak glutinous rice for one day, one night, or even a few days. I think this may be a mistake. From small to large, I see that the old people around them can only make zongzi for a few days at most Some of them only take 30 minutes to make rice dumplings. Maybe it's because my friends and I live in different regions and have different requirements for rice dumplings. There is also the treatment of Zongye, I personally think, if it is not too hard to buy Zongye, it is best not to boil Zongye, because once the Zongye is cooked, the fragrance of Zongye will no longer exist, and the aroma of zongzi will be greatly reduced. Zongye as long as repeated scrubbing soaking in water can be, a time did not run out of Zongye to soak in water, change water every day until the next use. Production steps:
Step 1: wash and soak the glutinous rice. (there is no strict regulation on this time. It mainly depends on your own time. I wash rice after lunch and make rice dumplings after taking a nap.) you can also soak in water for a longer time after making rice dumplings.
Step 2: remove water from the soaked glutinous rice, add edible alkali, salt and corn oil, and mix well. (alkali water zongzi has more alkali, other zongzi can put light alkali).
Step 3: fry the bacon and let it cool. Cut into small pieces and set aside.
Step 4: take two pieces of washed Zongye.
Step 5: align the tip of the leaf and roll it in clockwise to form a funnel. (if the leaves are bigger and the funnel is bigger, you can also move the tip of the leaves to the left like me, so that the funnel becomes smaller and the dumplings will be smaller.).
Step 6: put half of the glutinous rice into the funnel and then put in the bacon.
Step 7: add a flat funnel of glutinous rice and press the leaves on both sides in as shown in the picture.
Step 8: fold the leaves above and press the leaves on both sides in the shape of funnel.
Step 9: continue to fold the extra leaves along the shape of the funnel, and the direction is as you like.
Step 10: use brown hemp to tie tightly, don't tie too tightly, glutinous rice will expand when cooking, and it is easy to burst when cooking zongzi.
Step 11: cut off the extra leaves. The extra leaves are easy to prick other rice dumplings, especially hard rice dumplings.
Step 12: soak the rice dumplings in clean water and cook them together with other rice dumplings. After steaming, continue to cook for 25 minutes.
