Production steps:
Step 1: mix flour, eggs, water and salt. Take out the long dough and let it stand for 30 minutes.
Step 2: take out the dough and press it repeatedly. After each pressing, fold the dough in half and sprinkle with dry flour. Repeat five to six times until the surface is dry and smooth.
Step 3: finally, it is pressed into a thin sheet with a thickness of about 1 mm, and the strip shaped surface is divided into a section with a length of about 300 mm.
Step 4: install the cutter and divide the dough into noodles.
Materials required:
High gluten flour: 500g
Eggs: 2
Water: 70g
Salt: 5g
Note: 1. Adding eggs and salt to flour is to increase the gluten of noodles; 2. The total amount of eggs and water should not exceed 170g (calculated by 500g flour); 3. I use an electric pressing machine, which has high power and can press dry dough. If I use a manual pressing machine, I can increase the amount of water appropriately.
