Step 1: wash pumpkin, peel and slice.
Step 2: peel and slice the banana.
Step 3: steam the cut pumpkin over high heat for about 15 minutes.
Step 4: mash the steamed pumpkin while it's hot.
Step 5: add glutinous rice flour into the sweet potato paste to make a dough (the amount of glutinous rice flour depends on the moisture content of the sweet potato paste. Because the glutinous rice flour is not enough, I later added a little flour to make the dough not too dry).
Step 6: after kneading the dough, divide it into several small dosage forms and knead them into balls.
Step 7: flatten the small dose, put 1 or 2 banana slices to wrap them, and then knead them into a round cake.
Step 8: pour a little oil into a non stick pan and heat it to 50%. Put in the cake and fry it over medium low heat until golden.
Step 9: turn over and fry until golden.
Materials required:
Pumpkin: 400g
Banana: 1
Glutinous rice flour: half small bowl
Flour: right amount
Peanut oil: right amount
Notes: 1. The dough made of pumpkin and glutinous rice flour must not be too dry, otherwise the fried pumpkin cake will lose its soft and waxy taste. 2. The amount of glutinous rice flour completely depends on the moisture content of steamed pumpkin puree. Because of the lack of glutinous rice flour, I later added some flour to make up for it. 3. If you like to eat sweet, you can add some sugar into the dough or dip it in sugar or honey to taste better. I think the taste of pumpkin puree and banana is enough, but I didn't add it.
