Shao style dough lumps (wheat chuck)
Introduction:
"When I was in a foreign country, I occasionally miss my family's food. When I was a child, I never forgot eating my grandfather's Mai Geda. Shaoxing people also call it Mai Chutou or Mai Jiaosu. I have the impression that my grandfather's cooking is very delicate and smooth. After mixing the powder, he uses a chopstick and a boiling pot one by one. When I was at home, my mother liked to make something chewy. Hehe, the southern people were not as skilled as the northern people in making steamed buns. In order to imitate the numb wheat bumps, I worked hard to knead and knead and finally got it done. I took a pair of scissors and had a good time cutting the dough
Production steps:
Step 1: cut pork five flowers into small pieces, chop green onion, slice garlic into a bowl, add Shaoxing wine, soy sauce, oyster sauce, soy sauce, white granulated sugar, white pepper, mix well, marinate for half an hour (I marinated the night before, cover it with plastic wrap, put it in the refrigerator, it's delicious, it's suggested to do this if it's not urgent)
Step 2: stir the wheat flour with an egg and a little cold water, knead and knead it into a ball, put it for 5-10 minutes, boil the water in the pot, drop a drop of oil, put half a teaspoon of salt in it, cut the slender strips with scissors one by one, and take out the lumps when they are floating
Step 3: add 2 spoonfuls of oil to the hot pot of the soup pot, stir fry the pickled pork (as shown in Figure 1) until it is unripe, add tomato, stir fry twice, add Shaoxing dried vegetables, stir fry evenly, then add hot boiled water to boil, pour in keloids, cook for 2 minutes, taste the taste of the soup, add some salt and chicken essence
Materials required:
Wheat flour: about a bowl
Egg: 1
Pig five flowers: 2
Shaoxing dried vegetables: half a bowl
Tomatoes: 2
Scallion: 1
Garlic: 1 clove
Shaoxing wine: 2 teaspoons
Soy sauce: 2 teaspoons
Old style: half a spoonful
Sugar: 1 teaspoon
Oyster sauce: 1 teaspoon
White pepper: a little
Note: Shaoxing moldy dried vegetables are quite salty, my home drying may be slightly different from the supermarket selling it. My own wheat pimples are improved. Generally, Shaoxing people make dried vegetables, pumpkins or Puzi (melons), tomatoes and loofah, which are more vegetarian. I think it's delicious to add pickled pork five flowers or pork loin. I used to make them for my sister when I was at home, and they ate very delicious^^
Production difficulty: simple
