Introduction:

"Yuanxiao is based on stuffing. The general process is to first mix the stuffing, mix it evenly, then spread it into large round slices, cool it in the air, and then cut it into cubes smaller than table tennis. Then put the stuffing into a machine like a big sieve, pour the rice noodles and "sieve" them. With the stuffing in the collision into a ball, jiangmi also stained the surface of the stuffing to form a lantern festival. The layer of rice flour is very thin and the surface is dry. When the rice flour is cooked in the pot, it absorbs water and turns into paste. The way of making dumplings is completely different, similar to making dumplings. First, add water to the glutinous rice flour, and then mix all the ingredients to make the stuffing. Put them in a large bowl for later use (don't cut them into small pieces like Yuanxiao). The water content of dumpling stuffing is more than that of yuanxiao, which is one of the differences between the two. The process of making dumplings is also like dumplings, but there is no rolling pin. Wet glutinous rice flour is very sticky, so we have to pull a small mass of wet flour by hand and squeeze it into a circular shape. Use chopsticks (or thin bamboo slice tools) to pick out a ball of stuffing and put it on the glutinous rice slice, then use both hands to turn and close the mouth to make the dumpling. Production steps:

Step 1: prepare the required materials.

Step 2: wash the black sesame and put it into the pot. Stir fry it with low heat.

Step 3: put the roasted black sesame into the blender.

Step 4: stir into black sesame powder.

Step 5: add melted lard and sugar into the beaten black sesame powder.

Step 6: refrigerate the mixture for 20 minutes until it is formed.

Step 7: after the pumpkin is steamed, use a spoon to press it into pumpkin mud.

Step 8: add a small amount of glutinous rice flour for many times without adding water.

Step 9: knead smooth dough by hand (master the principles of basin light, face light and hand light, add water when dry, and add glutinous rice flour when wet) for 10 minutes.

Step 10: knead the sesame stuffing into a small ball.

Step 11: take a piece of pumpkin dough and knead it into a small bowl with your fingers.

Step 12: add sesame stuffing.

Step 13: make dumplings into tangyuan.

Step 14: put proper amount of water into the pot and bring to a boil. After the water boils, add the dumplings. After boiling again, turn to medium heat. After the dumplings float, cook for about three minutes.

Materials required:

Pumpkin: one piece

Glutinous rice flour: 250g

Black Sesame: 200g

Lard: 30g

Sugar: right amount

Note: if there is no lard, you can also use salad oil or butter instead, but salad oil is not good to solidify and form a ball. Black sesame can also be made into peanut, bean paste stuffing. The amount of sugar is added according to personal preference. Pumpkin contains water after steaming, so it can be mixed into dough without adding water. If the amount of flour is large, you can add some more water and flour.
