Braised Tofu with fish head
Introduction:
"I haven't eaten any fish for several days. It's so cold. I bought a big fish head to cook tofu."
Production steps:
Step 1: wash and drain the head of a fat headed fish
Step 2: heat up the frying pan, pour in the cooking oil, and fry the fish. It is suggested to put more than usual
Step 3: when the oil is 80% hot, add pickled pepper, dried pepper and garlic petals
Step 4: stir fry pickled peppers, dried peppers and garlic petals until fragrant, then take out the pot and set aside
Step 5: fry the fish head with stir fried ingredients, turn it over and fry the other side when it's scorched
Step 6: fry both sides of the fish head, pour in soy sauce, vinegar and cooking wine, and cook for a while
Step 7: add water over the fish head and bring to a boil
Step 8: bring the soup to a boil, add ginger slices and stir fried pickled peppers, dried peppers and garlic petals
Step 9: when the soup in the pot is thick, put in the cut tofu
Step 10: when the soup is only half cooked, add chicken essence and black pepper
Step 11: open a small fire to collect juice, sprinkle with scallion, you can start the pot to eat
