Step 1: prepare the Hericium erinaceus for soaking;

Step 6: put the Hericium erinaceus into a large bowl, steam for more than 30 minutes in a steamer, and boil with water to calculate the time. No bitter Hericium erinaceus will bubble success.
Step 7: when the Hericium erinaceus is steamed, prepare other materials for soup;
Step 8: blanch the pig bones in a pot;
Step 9: peel and cut carrot into pieces;
Step 10: peel the lotus root and cut it into pieces. Soak it in water with vinegar to prevent discoloration;
Step 11: blanch off the blood of the pig bone, put into the soup pot, put in carrots;
Step 12: add lotus root and ginger slices;
Step 13: pour the monkey mushroom and soup into the soup pot, bring to a boil over high heat, and turn to the minimum heat for 90 minutes;
