Production steps:

Step 1: prepare the ingredients

Step 2: wash the chicken and chop it into small pieces

Step 3: bring the water to a boil and blanch to remove the blood

Step 5: Smash ginger, cut pepper into sections, soak mushrooms and shred them

Step 6: take out the oil pan and put in the ginger (the amount of oil should be twice as much as usual)

Step 7: saute ginger until yellowish, add shredded mushrooms and dried pepper, stir fry for about one minute, and make it fragrant

Step 8: put in the chicken

Step 9: stir fry until the chicken is golden yellow. Pour in proper amount of cooking wine (about 4 teaspoons) twice

Step 10: cook the noodles for about two minutes, add a little chicken essence (optional)

Step 11: take out the noodles and blanch them with spinach

Step 12: pour the chicken, vegetable and soup into the noodle bowl in turn

Rice noodles: right amount

Note: first, our local rice noodle is this kind of dry noodles. I didn't soak it in water first, so that the rice noodle can better absorb the chicken soup. This kind of noodles taste better. If it's ordinary vegetable noodles or seafood noodles, I will cook the noodles in another pot with water, take them out and put them in a bowl. 2、 It takes about half an hour to cook such a bowl of noodles.
